1-14oz can Coconut Milk, full fat (We use Thai Kitchen)
1/4c Cocoa Powder
2Tbsp Dark Grade Maple Syrup
1tsp Pure Vanilla Extract
2Tbsp Chocolate Chunks (made from our bars)
1Tbsp Roasted and Salted Almonds, Walnuts or Pecans, crushed (for garnish)
1Tbsp Shredded Coconut, unsweetened (for garnish)
I used two, 8oz ceramic ramekins for serving. Select your vessels and set aside. Add the first 4 ingredients to stand mixer bowl with whisk attachment. Blend at a medium speed until combined. Reduce speed to low and add the chocolate chunks. Blend just until combined.
Pour mixture, evenly, into the two containers you chose. Top with equal parts of the nuts and coconut. Place in the freezer for at least one hour, uncovered. If you will be leaving them longer, be sure to cover them after the hour mark.

Paleo Rocky Road Ice Cream
Yes, you heard right. Even ice cream can be enjoyed, sparingly, living Paleo! We tried quite a few times before ending up with this gem of a recipe. It was fast, easy and we had all the ingredients in our pantry already!
